Wednesday

Good morning.  It's ridiculously early and I can't sleep.  Unless I get back to sleep, it is going to be a long day!

Yesterday was a lovely day.  The morning was busy but once that was all done and the girls had arrived, we had a great time.  Lots of laughing and loads of chit chat and the food went down a treat with just enough left over for me and another friend who is coming for lunch today.  This week sure is busy but that saves me a bit of time!  It was worth getting the decorations up early - it all looked lovely and festive.

I remembered to take some photos of the buffet lunch.

After that, I went off to do a bit of tuition, made some more fudge (some for my friend coming today and the rest to take to Mum and Dad who are very fond of it) and then spent the rest of the evening finishing clearing up, knitting and watching telly.

Today I have an easy morning before V arrives as the house is fine apart from needing to sweep the floor and there's just a bit of ironing to mop up.  Lunch is more or less made and tuition is all planned and ready to be delivered.  It'll be nice to rest and relax.

I'm off to Mum and Dad's tomorrow, rather than Friday, this week which means that I miss my usual SW group meeting.  Fortunately, Jennifer, the leader, runs several groups in a nearby village and I can get to the one this evening instead.  Fingers crossed.

Here's today's Advent Offering.  A firm favourite - 'In the first light' sung by acapella group, Glad.  I do love acapella.

  3. Yummy buffet!

Are those the veg sausage rolls? Mine don't look at all like yours, the pastry hasn't got such a nice rise, maybe I rolled it too thinly. The filling, although cheesy and herby, is quite "bready" and has a tendency to over bake and get dry. There also seems to be a lot of it, surely, I got the measurements right ?!? It is 150g of breadcrumbs, isn't it? it's a big bowl full....

  4. I managed to have another couple of hours of sleep and feel much better now.
The Christmas dishes are lovely, aren't they? Reduced in Sainsbury's!

Thanks, Jules. I'm sure today will be really pleasant too.

Yes, they're the sausage rolls, Annabeth. I cooked them from frozen - maybe that made a difference. The mixture does make a lot. If you divide the puff pastry into four, each quarter uses a quarter of the mixture. It does squidge down quite a lot when you mix it all together.
I took each quarter and rolled it into a sausage shape to fit the rolled out pastry (which was rolled out pretty thin). Each quarter made eight sausage rolls so thirty two all together.

  5. Did you use breadcrumbs made with fresh bread, not dried out? That's quite important.

  6. Joy, that looks like a feast fit for royalty. I particularly like the service of cream in the Waterford crystal I too serve mine in similar stunning tableware. LOL

  10. Oh, that food looks lovely, Joy! I once tried to make fudge and it was a complete & utter disaster, also coconut ice (ditto!) But it was a very long time ago (over 40 years ago!)

  11. I don't think I'd dare do it by hand but I have a foolproof recipe for my thermomix which is not trouble at all. Mum used to make coconut ice, I remember. We all loved it.
