    Long time no speak -- I do look into your blog occasionally, but Blogger won't let me comment for some reason. Trying again using my Google account. Your sourdough looks great, especially for a first attempt. I've been hooked on sourdough for three years now. As you have discovered, it takes a loooooong time to rise. I usually do one of the rises overnight in the fridge -- i.e. depending on what's convenient timing-wise, I make the dough, leave it in the fridge overnight, and shape it the next day, or do the first rise at room temperature, shape the loaves late evening, and then refrigerate overnight and bake in the morning. A room-temperature rise is at least 3-4 hours normally (I use wholemeal flour though, white might be a bit quicker). There are a few sourdough recipes on my blog now:

  2. Hello! How lovely to hear from you again. Google has been playing silly sausages with comments and accounts and so on and it seems that now people will only be able to read/comment via their Google account.
    Thanks for the helpful information. I have a wholemeal on the rise now (they're just small loaves) and I am expecting that it will take a fair old time and do it's second rise overnight again.
