Boxing Day

Good morning, everyone, and Happy Boxing Day to you all.

Yesterday came a bit unravelled as has today.  Poor old Beth has a very nasty cold virus that, for a time, she really thought was flu, but now says it's not as she'd go for the fiver if she saw one in the street!
Of course, she didn't come over and I won't be going to hers today to be 'spoiled'.  All deferred until New Year by which time I hope she will be feeling 100% better again.

Alex came over and Dave (son) turned up although he, too, was full of cold and almost cancelled earlier in the day.  We had a lovely time together; my two men ate like horses to the extent that I have to cook more veg for today's bubble and squeak!

There's loads and loads of turkey left (good-oh) and I will be dealing with it today as it was cooked on Sunday.  It is lovely, full of flavour as these Kellybronzes always are and it gave me loads of gorgeous stock too.  I'll have even more after the carcass has boiled up and I will do what I did last Christmas and that is reduce some of it down and freeze it in a box labelled 'Stock for Christmas Gravy 2019'.  I mixed last years with the stock from this year's giblets, seasoned it all a little bit and then just thickened it with thickening granules and it was absolutely fantastic gravy!

I'm back on SW plan as of now and thankful for it too.  A bit of letting go is nice but it's great to get back to the simple and healthy stuff again.  I'm pretty sure I will have gained a bit tomorrow but that all will be back to normal next week.

Today there's not an awful lot to do.  I have the turkey work, of course, but the men helped me clear the kitchen yesterday and there's just a dishwasher to unload.  Everything else is in reasonable order.

Midday I am driving over to Beth's to drop off some food  and pick Alex up.  He came over yesterday on his bike but I drove him home because he had a lot to carry.  So today he will cycle back home from mine.

Apart from that, I will continue to work on Emily (nearly all the knitting done now, just the making up left), watch some telly and research leftover turkey recipes.  Thank goodness it's a healthy food!

  1. Poor Beth! If it's the bug/virus we've had up here then it takes a while to shift. Hope some of your home cooked food helps.

    We had a lovely Christmas. Lots of laughs and fun and a really relaxed day. And not that much in way of leftovers!!

  3. We had a quiet day with DD and SIL. Daughter is recovering from a virus which has left her fatigued and SIL had a stinker of a cold. I cooked almost everything from scartch and took it up. We came home in the late afternoon as DH isn’t a great socialiser at any time. Over now for this year and we’ll be back to being on our own next year as DD and SIL are usually somewhere warm. Enjoy your postponed get together when it comes.

  4. Joy, it sounds like your Christmas Day was lovely, even if Beth wasn’t able to be there. Hope she’s feeling better soon. We had a busy and raucous celebration here! 28 came, feasted and visited. The men had a wonderful time debating everything - they enjoy being together, the ladies enjoyed visiting and the kids played! You are so right about getting back to eating well. Even though we enjoyed cookies, pies and even some panna cotta, with strategies from Weight Watchers, I can hop back on the right track! Wishing you a very happy new year!! Zenda

  5. How disappointing for you all. Colds really are miserable things and really knock the stuffing out of (sorry no pun intended following the Paxo references). I hope she gets better soon and you have dodged the bullet.

  6. Sorry to hear Beth has a cold, they make you feel really yukky. I wasn't able to send greetings yesterday, either busy, going to our elder son's for a meal, or tired when we got home! But I hoep you had a good time, and you are having a good Boxing Day, Joy. I didn't know you could keep stock for a year in the freezer, you learn something every day! But it sounded truly delicious, Joy.

    I was thinking of you yesterday, Margaret, wondering if you were enjoying your time away. I always keep stock and really, it is fine. A great way to get the most from your turkey (or chicken). This year's batch is now done and cooling. It should be in the freezer by the end of the day! :-)

  8. So sorry about the cold bugs! My brother has it too and was miserable when I saw him Saturday. I've already started nagging him to get a flu jab next year. Have a lovely, peaceful, happy Christmas xxx

  9. Sorry to hear about the bug! I think it's going around. My sister said her daughter and grandson didn't make it to hers as they were both sick!

  10. It was a shame and very disappointing all round but these things happen! When still teaching, I used to go down with something at the start of almost every single holiday!
    I hope your brother, Chrissie, and your sister's family, Sharon, are now recovering. We intend to have a meal and time together next week when Beth is fully recovered and able to enjoy it.
