Saturday morning and a recipe: Totally evil lime cheesecake


I've had a few requests for this. Originally it was a freebie recipe picked up when my two were little. It's very simple, very naughty and the quantities are not written in tablets of stone. When we were talking about food for today, DD asked for it - I haven't made it for decades so had to search my memory as well as the internet. This is what I did.

Ingredients: amounts all depend on the size of the tin really

For the base:
about 200g gingernuts, crushed into 'crumbs'
about 75g butter
about 1-2 tbsp runny honey

For the topping:
two tubs marscapone
A large tub of double cream (there's plenty left over for topping or other use)
Icing sugar
Three limes, zest and juice
Melted chocolate to decorate

I used the largest loose based high sided cake tin I had. The high sides mean that it will take as much topping as you make.

Method:
Melt the butter and honey in a saucepan, pour in the biscuit crumbs and stir until well mixed. Press into the bottom of a loose based cake tin (I used a non stick one so no need to butter the base and sides) and put in the fridge to chill.

In a large bowl, whip the cream until stiff and set aside.
In another bowl, whisk the marscapone and gradually add icing sugar until it tastes 'right'. Then add the lime juice and zest and whisk again. Keep tasting (such hardship) and add more sugar if you feel it is needed. More lime would also be fine, it's all according to taste. It could be lemon or another fruit, it doesn't have to be lime; liqueur would also go well in it.
Then stir in as much of the whipped cream as you wish to use. Taste is the determining factor, you can't go wrong here!

Spoon the topping over the biscuit base, smooth it evenly over, cover with some cling film or similar and chill.

Melt some good chocolate and drizzle over the top however you like (haven't done this bit yet). Or crumble chocolate flake, or buy choccy decorations - or whatever . . .

Slide the base out of the rest of the tin and serve on a pretty plate.

I left the weather till last today. It's raining. :0(((((
